December 4 is National Cookie Day and since this is a especial holiday month – why not fete with cookie ? Check out this formula for a delightfully versatile cookie have herbs from the garden – with many variations – they are really easy to make and can be made in advance .
accord to the National Day Calendar vane site , National Cookie Day was initiated by the Blue Chip Cookie Company in 1987 . The news cookie comes from the Dutchkoekie , which means little cake . I ’ve been bake vacation cookies for many years and I commonly make them ahead and freeze them so I can have an compartmentalisation to make cooky plate to give as gifts . The following recipe is prosperous to prepare – there are many variations – and it freezes well , before or after bake .
This recipe is adaptable – I often make it levelheaded by exchange half of the unbleached flour with whole - wheat pastry flour . Also , moolah can be made ahead and rolls can hive away in deep freezer until ready to slice and bake . All ingredients should be finely base or minced since any gravid pieces will hang up when slicing . If I want to use nuts or seeds , I often roll the whole bun in them so they are on the outside of the roll and after cutting they decorate the edge of the cookie .

herbal butter cookies
delicious with tea , coffee , eggnog or a deoxyephedrine of red wine , these cookies are childlike to make and any herb can be used . in all probability my favorite is a close race between rosemary , cinnamon basil , and anise Hyssopus officinalis peak . The cherry-red flower petals of Monarda make a endearing biscuit and the flower and leafage of orange mint are quite tasty . Any of the mints or stinker herb , as well as lavender or rose geranium flower , are quite good too . Both lavender and rose geranium are very perfumey , so apply less of them – about 1 tablespoon of the chopped flowers . They keep well in a tin , or up to 2 month in the deep-freeze .
Makes about 3 to 4 twelve cookies

12 tablespoons unseasoned butter , softened2/3 cup organic sugar1 declamatory egg1/2 teaspoonful vanilla extract extract2 cups unbleached white flour , sifted2 to 3 tablespoons soften unfermented herb leaves and/or flowersPinch of saltCream the butter and clams . Beat in the egg and the extract . Gradually mix in the flour , and stir in the mince herb and a pinch of salt . The dough will be soft . Divide the scratch into 2 parts . Using formative wrapper to forge the kale , ramble each part into a piston chamber about 1 1/4 - inch in diameter . Chill the rolls for an hr , or place in the deep freezer for 20 minutes .
Preheat the oven to 350 ? F. Remove the plastic wrap and slice the dough into 1/4 - inch rounds . pose the cookie on ungreased baking piece of paper and broil for about 10 second , until the cookie are a light gilt John Brown . Remove the cookie from the bake tack while they are spicy and cool on rack . ( They run to stick if set aside to cool off on the pans ) .
Here is an update from the original recipe for flavor combinations / mutation . My favorite herbaceous plant in them for the holidays is rosemary ; sometimes I add 1 to 2 teaspoonful orange or tangerine piquancy .
